The Exiobase dataset offers worldwide coverage and includes a wide range of industries and products (363). Ademe’s coverage, in contrast, is restricted to France.
When should we use Industry and when should we use Product? For example, with Audit Costs: it falls under other services, but is it considered a Product or an Industry?

Both can be valid. The industry and product classification is just about what underlying classification system that was used (CPA for products and NACE for industries).
You can find the NACE/CPA names and codes now as an extra column in the metadata for Exiobase emission factors.
